I seen that happen with beer before. Basically, the liquid cools below the freezing point but can't freeze because the crystals don't have anywhere to start. opening it or giving the bottle a sharp smack disturbs the liquid enough for nucleation to take place, which causes it to freeze almost instantly.

It's really cool to see it happen to water in a clear bottle, too.
